There's a photo floating around online of Vince McMahon having dinner with someone.  Any idea who it was?

Yes.  We were told it was his former assistant Beth Zazza, who used to work for the company.  She left WWE back in 2006.

Could Vince McMahon return to WWE?

He's the chief stockholder, so if he decided to enforce his will, he could.  If you mean could he walk in tomorrow and walk in the office and start acting like things were back to "normal", as if before his resigned, absolutely not.

You recently saying on audio that Nick Aldis would make a great "working" Intercontinental Champion made me wonder who you thought the best IC Champions were?

I would name, in no particular order, Randy Savage, Bret Hart, and The Honkytonk Man as my top three. Savage's character was awesome as a secondary champion and he had great matches with Ricky Steamboat, Bruno Sammartino, and Tito Santana as well as an entertaining feud with George Steele. Honkytonk was the greatest heel to ever hold that title in my opinion, especially from the perspective of getting fans who wanted to see him finally get his head handed to him actually pay for the change. His character was the epitome of someone the fans saw as "not deserving" his title and I can remember many a WWF house show watching the crowd want to kill him. Bret Hart was phenomenal as the champion with credibility and legitimacy during his IC title runs.

After those three, I would have to single out Shawn Michaels' first heel run in 1992-1993 where he was a bumping machine and made everyone look great in the early days of Monday Night Raw.  Mr. Perfect's run was great as wel, but unfortunately that run was curtailed by back injuries.

What made WWE go back to the old classic Intercontinental title look after that horrible other belt?

The story at the time was that Cody Rhodes paid money out of his own pocket to have a new classic belt created to showcase how it should be presented and management at the time bit on it.

Why are WWE selling NFTS?

The same reason everyone else is, to make money.
